Our last offering in the Harvest Series. Passionfruit coffee starts with fully ripe cherries from Caturra and Castillo varieties from the Huila region of Colombia. This coffee goes through a co-fermentation process that includes a 24-hour pre-fermentation in plastic bags, followed by 24 more hours of open air fermentation before being co-fermented with passionfruit for 5 days. The process imparts flavor notes of intense citrus fruit, pomegranate and cane sugar.
