The dry anaerobic fermentation that these cherries are exposed to is really what brings it up a notch. We've said it before - yeast & science change everything!

From third-generation coffee farmer Jairo Arcila, this coffee was grown and processed in the Quindio region of Colombia. During a dry anaerobic fermentation with the pulp on, the cherries were exposed to peach and wine yeast. Then, the cherries were pulped and placed on drying beds until the ideal moisture content was reached. 

All of that careful fermentation makes for a really juicy sip that tastes just like summer peaches.
