Tasting Notes: Peach, Grapefruit, White Tea
Altitude: 1450 - 1500m
Origin: Quindio, Colombia
Your new favorite honey processed coffee. Combining the sweetness of peach, the vibrance of grapefruit, and the subtle elegance of white tea, this cup is definitely set apart. The dry anaerobic fermentation that these cherries are exposed to is really what brings it up a notch. We've said it before - yeast & science change everything!
From third-generation coffee farmer Jairo Arcila, this coffee was grown and processed in the Quindio region of Colombia. During a dry anaerobic fermentation with the pulp on, the cherries were exposed to peach and wine yeast. Then, the cherries were pulped and placed on drying beds until the ideal moisture content was reached.
All of that careful fermentation makes for a really juicy sip that tastes just like summer peaches. If you enjoyed the last zinger we sourced from Colombia, the Strawberry Wine, you'll definitely want to get your hands on this one. We're excited and grateful to offer another experimental micro-lot like this one that will have your taste buds dancing.
